Harryl O’Boyle’s Peanut Butter Snowballs

Peanut butter snowballs

Ingredients:
  • 1 c. smooth peanut butter
  • 2 T. Margarine
  • 1 c. powdered sugar
  • 2 c. Rice crisp cereal
  • Powdered sugar
  • Angel Flake coconut
    Cooking Instructions:
  1. Blend first 3 ingredients
  2. Add rice crispy cereal and mix by hand into a dough
  3. Make an icing with the powdered sugar and some water
  4. Make the dough into 1″ balls and roll them first in the icing, and next in the coconut flakes
  5. Allow to dry for one hour before serving

 

Growing up, this is a recipe that my family made every Christmas— I think we ate more of the dough than the cookies. I still make them every year.
