step one: place scallops on top of a dry dish towl. Using another dish towel, dry the scallops by pressing them gently.
step two: let scallops rest between dish towls at room temperature for about 10 minutes. step three: season scallops with salt and pepper,
Step Four: heat 1-2 tablespoons of cooking oil in a nonstick pan until hot. Add scallops (flat side down) to pan in a single later and cook for 1 1/2 to 2 minutes
Step Five: Add 1 tbsp of butter to the pan and flip the scallops over. Baste scallops with melted butter as they continue to cook.
Step Six: continue to cook for about 30-90 seconds longer - or until the sides of the scallops are firm.
Step Seven: Once scallops are finished cooking, remove from pan and serve immediately
