• 2 1/2 cups all-purpose flour
  • 1 cup cold cubed
  • unsalted butter
  • 1/2 cup cold ice water
  • 1 tbsp sugar


In a bowl of a KitchenAid mixer add flour, salt, sugar and butter. Mix with paddle attachment until pea-sized pieces of butter remain. Don’t over-mix; we need the small pieces of butter to create the flakiness. Add cold water and just mix until dough comes together.

Press together, wrap in plastic and chill for at least one hour, until the flour can absorb and soften the
flour. If you’re using only half of the dough, you can freeze the other half for future use.
