1 cup – Lucky’s old fashioned rolled oats
2 teaspoon – cinnamon (ground)
1/2 teaspoon – ginger (ground)
1/2 teaspoon – kosher salt
3 3/4 cup – almond milk
2 large – apples ((preferably Granny Smith or Honey Crisp, diced into 3/4” pieces))
1/4 cup – golden raisins (optional)
3 Tablespoon – pure maple syrup
1 teaspoon – vanilla extract
1/3 cup – walnuts (lightly toasted)
1/4 cup – applesauce (optional)
In a medium sauce pot, combine Lucky’s oats, cinnamon, ginger, diced apples, almond milk, apple sauce (if using,) golden raisins (if using,) salt and maple syrup.
Heat over medium heat, stirring often, until liquid is absorbed and the oatmeal has thickened (approximately 6-8 minutes.)
Remove from heat, stir in vanilla.
Ladle into serving bowls and top with toasted walnuts and additional almond milk. Enjoy!
