- 1 small head of purple cabbage, shredded
- 1 bunch dino kale, chopped
- 1 cup broccoli, diced
- 1 large carrot, shredded
- 1 red pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup sunflower seeds
- 1 tablespoon fresh ginger, grated
- 1/2 medium shallot, diced
- 2 tablespoons rice wine vinegar
- 1 tablespoon toasted sesame oil
- 2 teaspoons soy sauce
- 1 teaspoon brown sugar
- Place all ingredients for the slaw in a medium sized bowl.
- Whisk together all dressing ingredients.
- Pour dressing over vegetables. Toss to coat thoroughly.
