Avocado Strawberry Spinach Salad with Chicken


6 cups – packed baby spinach

1 pint – strawberries (hulled and sliced)

4 ounces – feta crumbled

1/4 cup – sliced almonds

1 – avocado chopped

1 cup – cooked chicken breast (*tip – if you make the whole fryer this week, save some of the chicken to use in this recipe)

1/2 cup – olive oil

1/4 cup – balsamic vinegar

1 teaspoon – honey

1 teaspoon – Dijon mustard

1 clove – garlic (minced)

Salt and pepper to taste


1. Put the spinach in a large bowl. Add the strawberries, avocado, feta and almonds.

2. Add all vinaigrette ingredients to a mason jar, screw on lid and shake vigorously.

3. Drizzle the dressing over the salad, toss well and serve.
