Lucky’s Bakehouse Lemon Meringue Pie

2 pre-baked pie shell 9”
1 1/4 cup lemon juice
2 T lemon zest
2 1/2 sugar
2 1/4 water
1/2 cup cornstarch
15 eggs
1/2 t salt
2 1/2 oz butter
4 cups powdered sugar

Instructions

2 pre-baked pie shell 9” 1 1/4 cup lemon juice 2 T lemon zest 1 1/4 sugar 2 1/4 water Mix in large sauce pan and bring to boil
1 1/4 cup sugar 1/2 cup cornstarch 15 yolks 1/2 t salt Temper the hot lemon mixture into the yolk mixture. Cook until thick and shiny.
2 1/2 oz butter Whisk in butter Pour mixture into pie shells 15 eggs white 4 cups powdered sugar Meanwhile, whip the eggs white until they just start to get stiff. Add powdered sugar little by little until a thick shiny meringue forms. Top pies, Make sure to adhere meringue to crust on sides
Bake at 325 for 20 min Then 275 for 30 min
