Balsamic Honey Boneless Breast of Chicken, Oven Fries & Apple Coleslaw

Ingredients

Balsamic Honey Boneless Chicken Breast
2 pounds boneless chicken breasts
1 bag Alexia Oven Fries
1/4 cup balsamic vinegar
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons brown sugar
2 cloves garlic minced
Apple Slaw
4 cups shredded green cabbage
2 cups chopped broccoli
1 cup shredded carrots for fun try different colored carrots
1/2 cup thinly sliced scallions
2 Braeburn apples cored and shredded
Apple Slaw Dressing
1 cup plain yogurt
1/3 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon grated garlic
kosher salt freshly ground pepper
1/3 cup olive oil

Instructions

Preheat oven to 425 degrees Fahrenheit. Place Alexia Oven Fries on cookie sheet. Place in oven and bake for approximately 20 minutes. Flipping fries part way through cooking. Cook until desired crispiness is attained.

While fries are cooking, mix marinade ingredients together. (If desired, marinade chicken for two hours prior to cooking, but it’s not necessary if time does not permit.) When ready to cook, slice chicken both lengthwise and width wise into thinner and smaller strips. Pour marinade into skillet and heat to medium-high heat. Add chicken. Cook approximately 4-5 minutes aside until there is no pink in the center of the chicken. Flip chicken pieces as frequently as you like while cooking. Sauce will become stickier as you cook chicken.

For apple slaw combine cabbage, broccoli, carrots, scallions and apple together. Add dressing per serving if you are not eating the salad in one sitting.
