Beef & Three Bean Chili

Ingredients

2 Tablespoons – olive oil

2 – white onions (medium dice)

1 – red bell pepper (medium dice)

2-3 – jalapeño (seeded, small dice)

1/2 cup – roasted Hatch green chilies (skinned & seeded small dice)

8 – garlic cloves (minced)

1/3 cup – chili powder

2 Tablespoons – cumin (ground)

2 lbs – Lucky’s Market lean ground beef

2 Tablespoons – sea salt

1 teaspoon – oregano (dried)

1 can – Lucky’s diced tomatoes (28oz)

1 can – Lucky’s crushed tomatoes (28oz)

1 1/2 cups – water

1 1/2 Tablespoons – fresh squeezed lime juice

1 can – Lucky’s black beans (rinsed & drained, 15oz)

1 can – Lucky’s pinto beans (rinsed & drained, 15oz)

1 can – Lucky’s kidney beans (rinsed & drained, 15oz)

Lucky’s cheddar cheese (shredded)

green onions (thinly sliced)

sour cream

fresh cilantro

Instructions

1. Heat Sauce Pot over medium heat.

2. Add Olive Oil, Onion & Bell Pepper; sauté until onion is beginning to soften, about (4) minutes.

3. Add the Ground Beef and Salt, breaking up the beef into small pieces; continue to cook until beef is no longer pink, about (8) minutes.

4. Add the Garlic, Chili Powder, Cumin & Oregano; stir to combine.

5. Add the remaining ingredients and bring to a simmer. Simmer for approximately (30) minutes, stirring often. Taste and season with salt if needed.

6. Ladle into serving bowls and top with Cheddar Cheese, Sour Cream, Green Onions and Cilantro. Enjoy!
