• 1-1 1/2  pounds ground bison
  • 1 white onion diced
  • 2 cloves garlic minced
  • 1/4 cup dried bread crumbs
  • 1 egg lightly beaten
  • 1/2 jalapeno or anaheim pepper, seeded and diced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/3 cup mayonnaise
  • 1 tablespoon cilantro
  • 1 teaspoon grated lemon zest
  • 1 tomato sliced
  • 4 ciabatta buns
  • 4 lettuce leaves
  • Optional: mild white cheddar cheese slices


Place bison meat in a large bowl. Add diced onion, garlic, bread crumbs, egg, pepper, salt, cumin and black pepper. Mix together. If you are not a spice person use the Anaheim pepper in place of a jalapeno. Bell peppers are a fine substitution too. Form meat into four patties.

To cook, turn grill to medium-high heat. Brush grill with olive oil. Place burgers on grill. Cook approximately 4 to 5 minutes a side or until burgers reach an internal temperature of approximately 160 degrees Fahrenheit. Top with cheese if desired.

While burger is cooking mix together mayonnaise cilantro and lemon zest. If you’re not a mayo person, then make a pesto sauce instead.

Serve the burgers on a bun. Add a tomato slice, lettuce leaf and sauce. Try with corn on the cob and salad of your choice.
