Black Bean Mango Salsa

Ingredients

1 15.5 oz – can Lucky’s Black Beans

1-2 – jalapeños

1/3 cup – fresh lime juice

1 – red bell pepper

1/2 cup – red onion

1/2 cup – cilantro (loosely packed)

1 tsp – kosher salt

1/4 tsp – black pepper (ground)

Instructions

Remove the skin and pit from the mangos.  Dice the mangos into 1/2″ cubes.

Rinse and drain the black beans.

Remove the seeds from the jalapeños and dice into 1/8″ cubes.

Dice the red bell pepper and red onion into 1/4″ cubes.

Dice the red bell pepper and red onion into 1/4″ cubes.

Coarsely chop the cilantro.Combine all ingredients, toss well. Enjoy!
