Blueberry Maple Oat Muffins

Ingredients

4 cups – Lillabee gluten-free flour

2 teaspoons – baking powder

2 teaspoons – baking soda

1 teaspoon – salt

2 teaspoons – cinnamon

4 cups – almond milk

4 cups – oats

1 1/4 cup – pure maple syrup

1/2 cup plus 2 tbsp – molasses

2 cups – brown sugar

2 teaspoons – vanilla

2 teaspoons – maple extract

4 cups – blueberries

Instructions

1. Stir together flour, baking powder, baking soda, salt and cinnamon in large bowl, set aside.

2. In a separate bowl combine oats, almond milk, maple syrup, molasses, brown sugar and extracts.

3. Make a well in dry ingredients and slowly mix in the wet until combined. Add blueberries

4. Fill muffin cup completely to the top, top with sugar and raw oats

5. Bake at 350 until toothpick inserted comes out clean, approx. 20 minutes

6. Yield- 2 dozen muffins
