Buckwheat Pear Cake


Main Dish
1 lb – softened butter

3 1/3 cup – granulated sugar

2 tablespoons – vanilla extract

12 – eggs

3 cups – almond flour or finely ground almonds

1 1/2 cup – buckwheat flour

1 1/3 cup – all-purpose flour

Side Dish

2/3 cup – cornmeal

4 tsp – baking powder

4 tsp – salt

2 cups – grated pears

sliced pears for garnish

granulated sugar for garnish


1. Preheat oven to 350 degrees and grease two standard loaf pans.

2. Mix together butter and sugar on medium speed until light and creamy, about 2-3 minutes.

3. Add eggs and vanilla to creamed butter/sugar and mix on low until combined, about 2 minutes.

4. Mix together the remaining dry ingredients and whisk lightly to combine.

5. Add dry mix to butter/egg batter and mix until combined.

6. Add grated pears and mix until thoroughly incorporated.

7. Pour finished cake batter into pans. Garnish with pear slices and sprinkled sugar on top.

8. Bake for 30-40 minutes. The cake is done when a toothpick entered into the center comes back clean.
