1 loaf Italian Bread – Sliced
4 tablespoons olive oil – divided
4 cluster tomatoes
1 log Fresh Mozzarella – sliced
1 red pepper
1 yellow pepper
1 orange pepper
salt to taste
Pepper to taste
1 cup smoked almonds
Take 8 slices of bread, 2 for each sandwich. Use approximately 2 tablespoons of olive oil to rub the outsides of each slice. Cut each tomato in half, cut one half into slices. Use the other half to rub on the inside of the sandwich slices. Sprinkle with salt. Line sandwich bread with tomato slices, mozzarella cheese slices and basil. Close sandwiches with olive oil sides on the outside. On a skillet on medium heat, cook each side of sandwiches until light brown in color and cheese is melted. For an extra touch, add prosciutto to each sandwich.
Slice peppers in half and remove stem and core. Cut each half into three slices, approximately 1-inch in width. Place in bowl and drizzle with olive oil, and salt and pepper to taste. Place grill on medium-high heat and place pepper slices on grill. Cook approximately 3 minutes a side, until peppers are tender. Serve peppers with sandwiches. If desired, serve each sandwich with a 1/4 cup smoked almonds.
