Caprese Sandwiches with Fruit Salad


10 organic Roma tomatoes

1 19 oz jar Lucky’s Market sweet roasted red peppers

1-2 tablespoons Extra virgin olive oil

Salt to sprinkle

Fresh basil

1 8oz Lucky’s Market fresh hand-wrapped mozzarella ball

1 baguette

4 kiwis peeled and sliced

1 pint organic blueberries

6 oz organic raspberries or blackberries


Cut baguette into 4 sections. Slice each section through the center lengthwise, sandwich style. Cut 2 Roma tomatoes lengthwise. Rub inside of tomatoes on inside of bread. Drizzle inside lightly with olive oil and sprinkle with salt. Slice remaining tomatoes. Slice cheese. Layer tomatoes, mozzarella cheese, basil leaves, and roasted peppers on bread. Make as many layers as you like. Add top of sandwich and enjoy! For added flavor drizzle balsamic glaze over the mozzarella.

Peel and slice kiwis. Place in a bowl with blueberries and raspberries or blackberries and serve fruit with sandwiches.
