Carne Asada or Pollo Asada

1 pound made in-house Carne Asada or Pollo Asada

Spanish Rice

1 tablespoon olive oil

3 garlic cloves diced

1 onion diced

2 cups chicken stock

1 cup white long-grain rice

1-2 Roma tomatoes diced

3-4 tablespoons tomato paste

1 teaspoon oregano

1 teaspoon salt

1 pinch pepper or red chili flakes


Carne Asada or Pollo Asada

Turn BBQ on medium heat, approximately 375 degrees Fahrenheit. Cook Carne Asada approximately 2 minutes aside. It is thinly cut, be careful not to overcook. For Pollo Asada, cook approximately 4 minutes a side, until there is no pink inside.

Spanish Rice

In a saucepan over medium-high heat, add olive oil, garlic and onion. Saute until onion is soft. Add chicken stock, rice, chopped tomato, tomato paste, oregano, salt and pepper. Bring broth to a boil, cover and reduce to simmer. Cook for 15-20 minutes, until broth is absorbed into rice.

Serve rice and meat or poultry with Lucky’s made in-house guacamole, salsa and Garden of Eatin’ Tortilla Chips or Lucky’s made in-house tortilla chips.
