Carrot Soup, Salad & Focaccia Rounds


Carrot Soup

1 tablespoon olive oil

1 small to medium white onion chopped

2 cloves garlic minced

4 cups carrots chopped

4 cups vegetable broth 32 oz

1/2 – 1 cup milk

1/2 teaspoon black pepper to taste

Top with goat cheese optional

Sprigs of fresh dill optional

Simple Green Salad

1 head red lettuce washed and torn into bite-sized

1 cucumber partially peeled and sliced

1 pieces Beefsteak tomato sliced and chopped into bite-sized

1 bottle Lucky’s Market Sesame Ginger salad dressing


Carrot Soup

In a large skillet on medium heat, add olive oil, garlic and onion. Sauté for 2 to 3 minutes. Add chopped carrots and cook for another 3-5 minutes, stirring occasionally. Add vegetable broth and bring to a boil. Reduce to simmer and cook for another 10-15 minutes, until carrots are tender. Remove from heat. Pour mixture into a blender or food processor and blend until mixture is smooth. Return to skillet. Add desired amounts of milk and pepper to taste. Heat until warm and serve.
