Chicken & Lime Tortilla Soup

Ingredients

6 – corn tortillas (cut into thin strips)

2 Tablespoons – extra virgin olive oil

1 – large white onion (diced)

10 cloves – garlic (minced)

4-6 – jalapeños (seeded & diced)

10 oz – Lucky’s rotisserie chicken (shredded)

32 oz – Lucky’s chicken stock (1 box)

14.5 oz – Lucky’s petite diced tomatoes (1 can)

1/4 teaspoon – cumin (ground)

1/4 cup – fresh lime juice

1 teaspoon – sea salt

1 – avocado (diced)

1/4 cup – cilantro

Instructions

1. Arrange tortilla strips on baking tray; bake in 350º oven until crispy (approx. 12-15 minutes), set aside to cool.

2. Heat sauce pot over medium heat; add EVO oil, onion, garlic & jalapeño, sauté until onion is just tender, approx. 5 minutes.

3. Add rotisserie chicken, chicken stock, diced tomatoes, cumin, lime juice & salt. Simmer for 10-12 minutes.

4. Ladle soup into serving bowls and garnish with tortilla strips, cilantro & diced avocado. Enjoy!
