Cinco de Mayo Fajitas


1 pound beef or chicken Fajitas

1 container Lucky’s Market guacamole

1 16 oz jar Lucky’s Market Black Bean & Corn Salsa

1 bag Paqui tortilla chips Cool Salsa Verde flavor

1 5.5 oz organic taco shells or corn tortillas

1 cup brown rice cooked


Don Francisco Cotija cheese

Black beans


Add two cups of water to a saucepan. Bring to a boil. Add 1 cup brown rice. Cover and reduce heat to low. Cook for approximately 45 minutes. Place a skillet on the stove over medium-high heat. Cook fajita mix. Will take approximately 8-10 minutes. Feel free to add more red, yellow and green peppers to mix.

Heat taco shells in the oven on low or fry up corn tortillas. For the latter, place a few tablespoons of olive oil in a skillet and turn on medium heat. Place tortillas in oil and cook until crispy.

Serve fajita mix with tacos or tortillas. And some tortilla chips for fun and serve everything with rice, guacamole and salsa for a tasty feast. Add black beans and cotija cheese if extra flavors are desired.
