Deconstructed Fish Tacos


Deconstructed Tacos

1 tablespoon olive oil

2 pounds tilapia (or cod or halibut)

2 tablespoons fresh lime juice (for cooking the fish)

1 tablespoon olive oil

1 head organic red leaf lettuce

1 bag Garden of Eatin’ Tortilla chips


1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 onion powder

1/2 teaspoon dried oregano

2 tbsp chili powder

3 tsp cumin

Basic Tomato Salsa

2 tablespoons lime juice (approximately 1 lime)

2 cups organic tomatoes diced

1/2 white onion diced

4 garlic cloves minced

1/2 organic green bell pepper minced

1/2 organic red bell pepper minced

1/2 Anaheim chili minced

1/4 teaspoon salt

1/2 cup cilantro

Pepper to taste


Mix seasoning spices together in a bowl. Douse fish with lime juice and sprinkle with seasoning. Turn on grill to medium heat and brush grates with olive oil. Grill fish for just 3-5 minutes aside, until it turns opaque and is flaky.

While fish is cooking, chop and mince salsa ingredients and add together in a bowl. Drizzle with lime juice and flavor with salt and pepper to desired flavor.

Place fish on lettuce. Top with tomato salsa. Serve with tortilla chips.
