Chicken Tenders and Roasted Potatoes


1 lb – chicken tenders

2 medium – onions (diced)

1 lb – red, white, or yellow potatoes

2 tsp – garlic

1 tsp – salt



  1. Preheat oven to 425. Coat shallow roasting pan with non-stick cooking spray.
  2. In large bowl combine onions, potatoes, and chicken – coat lightly with olive oil, sprinkle with garlic, salt, pepper. Toss to coat evenly.
  3. Spread in single layer in pan. Bake on lower oven rack for 20-25 min, until potatoes are tender and chicken is cooked through. Divide among 4 plates.
