Butter or olive oil
4 slices – Organic bread
4 slices – Extra mature cheddar
1 slices – red pepper sliced into thin or orange or yellow
1 – Roma tomato thinly sliced
Lucky’s Market fresh salsa
1 – mango peeled and cut into cubes
1 6 oz – pack blackberries
2-3 – kiwi peeled and sliced
1 6 oz – pack blueberries
1/4 cup – mint diced
Juice from 2-3 limes
1/4 cup – honey
Mix together and drizzle over fruit salad
1. Spread butter or olive oil on outer sides of sandwich. On the inside of one sandwich place one slice of cheddar cheese, sliced red pepper, two pieces prosciutto and another slice of cheddar cheese and close the sandwich. In another sandwich place one slice of cheddar cheese, sliced tomato and another slice of cheddar cheese and close the sandwich.
2. Place each sandwich in a skillet on low to medium heat. Make sure the outer pieces don’t cook too fast or they will burn before the cheese melts. Cook one side for 3-5 minutes. Flip and continue to cook on the other side until both sides are golden brown and cheese has melted.
3. Serve with Lucky’s Market house salsa and or avocado slices and fruit salad.
