1 16-ounce package frozen hash browns
1/4 cup milk
1 cup shredded mild cheddar cheese
1/4 cup fresh chopped chives
1/2 teaspoon salt
1/4 teaspoon pepper
Optional: Sour cream
Lightly brush or spray the waffle iron with vegetable oil before you start cooking the first waffle. You should not have to grease it again while cooking waffles. In a bowl, beat eggs and add milk. Three eggs make perfect waffles, but they can run a bit on the dry side. You may want to try 4 eggs. Add cheese, salt and pepper to egg mix. Stir in chives and hash browns.
Scoop approximately 1 cup of mixture into a waffle iron. Pat mixture down to flatten it out. Cook for approximately 4 minutes. Eat plain or serve with sour cream and chives.
