2 pounds – catfish (cut into strips)
1/2 teaspoon – salt
1/4 teaspoon – pepper
1/4 cup – white corn meal
1/4 cup – Canola oil
8 6-inch – corn tortillas
1/4 cup – fresh cilantro (chopped)
1 cup – tomato salsa
1 cup – lettuce (shredded)
Season the catfish strips with salt and pepper and coat with cornmeal. Pan fry in canola oil until done.
Warm the tortillas. Place some of the cooked fish on each tortilla. Top with salsa, cilantro and lettuce. Fold tortillas in half and serve.
