Goddess Grilled Cheese

Ingredients

1/4 cup organicgirl white cheddar dressing
1 tablespoon fresh minced parsley
1 tablespoon fresh minced chives
2 teaspoons olive oil
1 package (5 ounce) organicgirl i heart baby kale
1 clove garlic, thinly sliced
1/4 teaspoon fine sea salt
1 tablespoon olive oil
1 tablespoon butter
4 slices seeded bread
1 cup shredded cheddar cheese, about 4 ounces

Instructions

in a small bowl combine dressing, parsley and chives. set aside.

in a large skillet, warm oil over medium-low heat. add kale, garlic and salt. cook for approximately 5 minutes, stirring occasionally, until wilted. transfer to a bowl and wipe out skillet.

in the same skillet, melt butter over medium heat. place two slices of bread in the pan and top each with half the cheese, half the kale mixture, and half of the goddess dressing. place another slice of bread on top of each and gently press down.

cook for 3 minutes, then carefully flip and cook an additional 3 minutes or until bread is golden brown and cheese is melted.
