Grilled Brie with Cherry Compote


1 round Lucky’s Market brie

1 tablespoon olive oil

2 cups cherries pitted and sliced in half

2 teaspoons honey

1/4 teaspoon salt

1 tablespoon fresh thyme


Turn grill on medium-high heat. Brush brie wheel with olive oil. Place brie wheel on grill. Grill each side for approximately 3-4 minutes. Place red lettuce on a plate. When brie has clearly softened (you will likely see cheese beginning to melt through the side), remove from the grill and place brie on lettuce on plate. Pour cherry compote over the top, or serve on the side. Serve with crackers or toast as an appetizer or with dinner.
