Homemade Gazpacho & Chicken Quesadillas



4 full Lucky’s Market Chicken Quesadillas cut in half


1 cucumber slightly peeled and core removed

3-5 large heirloom tomatoes

4 cloves garlic

1/2 red onion

2 red peppers

3 cups tomato or vegetable juice

1/4 cup olive oil

1/4 cup white wine vinegar

1/2 teaspoon salt

1/2 – 1 teaspoon pepper

Optional: Spice it up with Tabasco or any hot sauce of your choice, or add fresh basil or cilantro.


Blend each vegetable separately then combine together into a bowl, chill and serve with chicken quesadillas.
