Made In-House Green Chile Sausage with Green Chile & Peach Quinoa Salad


4 Made In-House Green Chile Chicken Sausages

1 cup dry quinoa

2 cups water

1 teaspoon olive oil

1-2 cloves garlic, minced

1/2 red bell pepper, diced

1/2 orange bell pepper, diced

1/2 yellow bell pepper, diced

3 green chiles roasted, peeled and diced

3 peaches, diced


1/3 cup extra-virgin olive oil

1/3 cup fresh lime juice

3 cloves garlic, minced

1/2 teaspoon sea salt

1/4 teaspoon black pepper

2 cups cilantro, chopped


Place two cups of water and 1 cup dried quinoa in a pot. Place on stove on medium-high heat. Bring water to a boil. Reduce heat to simmer. Cover pot and cook quinoa for approximately 12-15 minutes. Remove from heat and let sit. Fluff with a fork then place in a large salad bowl. Add chopped peppers, peaches and garlic to quinoa.

Turn grill on medium. Place sausages on grill and cook. Turn sausages approximately every 2-3 minutes until all sides are cooked, about 10-12 minutes. Brush green chiles with olive oil. Place them on grill. Roast for approximately 3 minutes a side, until skin looks brownish. Remove from grill and let sit. When chiles have cooled peel and dice them and add to quinoa.

Mix dressing ingredients together and pour over quinoa and stir. Serve quinoa salad with sausages.
