Oatmeal, Walnut & Chocolate Chip Cookies


1 cup – butter (softened)

1 cup – light brown sugar (packed)

1/2 cup – granulated sugar

2 – eggs

2 teaspoon – vanilla extract

1 1/4 cup – all-purpose flour (unbleached)

1/2 teaspoon – baking soda

1 teaspoon – kosher salt

3 cup – Lucky’s quick cooking rolled oats

1 cup – walnuts (chopped)

2 cup – semisweet chocolate chips


1. Combine the flour, baking soda & salt in a medium bowl; set aside.

2. In a large mixing bowl, cream together the softened butter, brown sugar and granulated sugar.

3. Beat in the eggs and vanilla.

4. Gradually add the flour mixture and combine thoroughly.

5. Stir in the Lucky’s quick cooking rolled oats, walnuts and chocolate chips.

6. Drop by heaping spoonfuls onto ungreased baking sheets. Bake for 10-12 minutes in a 350 degree preheated oven, until cookies are just browning around the edges.

7. Remove from oven and allow to cool for 5 minutes before transferring cookies to a wire rack to cool completely. Enjoy!
