Pasta with Meatballs


2 tablespoons olive oil

2 cloves garlic minced

1/4 onion chopped

4-6 Roma tomatoes diced

2 teaspoons Italian spices

1 package Lucky’s Market Fresh hand-cut egg pasta

1 package Lucky’s Market chicken meatballs


Heat olive oil in a skillet on medium-high heat. Add garlic and onion. Sauté for approximately 3 minutes. Add tomato and spices. Sauté until tomatoes are heated through. In a separate skillet or on the BBQ cook meatballs until heated through. In a saucepan bring water to a boil. Add pasta and cook for approximately 3 minutes. Place cooked pasta in a bowl, top with tomato mix, meatballs and sprinkle with Parmesan cheese. For an extra veggie, sauté broccoli florets in olive oil and add to tomato mixture. For more liquid with the tomatoes, add more tomatoes, white wine or chicken broth to the tomato mix.
