Poulet Frites & Roasted Beets with Rosemary

Ingredients

3-4 cloves garlic

1 organic whole chicken fryer with backbone removed and divided into 4 pieces

4 russet potatoes peeled and sliced

2 tablespoons fresh rosemary, divided

2 tablespoons butter

1/2 – 1 cup olive oil

1 bunch organic red beets stems removed

1 bunch organic gold beets stems removed

salt and pepper

Instructions

When you purchase the chicken, you can ask to have the backbone removed or do it yourself. Splay the chicken out on a cutting board and cut it into 4 pieces. It will look like two breasts and two legs. Place chicken skin side up on a cooking sheet or pan.

Turn oven on to 400 degrees Fahrenheit. Peel and crush garlic cloves. Rub garlic all over chicken. Drizzle and brush chicken with olive oil. Sprinkle rosemary, salt and pepper over chicken. Place chicken in oven and cook for 20 minutes. Divide one tablespoon of butter into 4 pieces. At 20 minutes, remove chicken from oven and rub butter over chicken. Return chicken to oven for another 20 minutes. Remove again and baste with butter one more time. Cook for another 20 minutes until juices from chicken are clear. Total cooking time should be about an hour

Peel the Russet Potatoes. Slice them lengthwise horizontally and then vertically into fries that are approximately 1/4 inch wide and 1/4 inch thick. Pour olive oil into a skillet so that it covers the bottom of the pan and fills it approximately 1/8 to 1/4 inch. Turn heat on medium high. Place cut fries in oil. Cook approximately 2-3 minutes a side. Keep turning so that they don’t burn. Cook for approximately 7-10 minutes. Use a lid or mesh cover to keep oil from spraying. If you have a deep fryer use that. The potatoes will turn golden on the outside. Line a plate with paper towel. Remove fries and place them on paper towel. Sprinkle with salt. If you are not eating the fries right away, you can do a second frying for approximately five minutes right before you serve them.

Turn oven to 425 degrees Fahrenheit. Peel beets. Slice into wedges. Place in a baking dish and douse them with olive oil. Sprinkle with salt and pepper and rosemary. Place beets in oven and cook for approximately 20-30 minutes. Cook until beets are baked and slightly roasted.  For added yumminess, sprinkle goat’s cheese over the beets as you serve them.

Serve chicken with French fries and roasted beets.
