Roasted Chicken Sausage with Potatoes & Peppers


1 lb – uncooked chicken sausage (cut into 1 in pieces)

1 lb – fingerling potatoes (halved)

1 – medium red bell pepper (chopped)

1 – medium yellow bell pepper (chopped)

1/2 – medium yellow onion (chopped)

3 cloves – garlic (minced)

2 tbsp – olive oil

1/2 tsp – Italian seasoning

1/2 tsp – kosher salt

1/4 tsp – black pepper


1. Preheat oven to 400. Coat large baking sheet with non-stick spray. Combine raw sausage, potatoes, peppers, onions, and garlic on baking sheet. Drizzle with olive oil. Sprinkle with Italian seasoning, salt, pepper. Toss to coat evenly. Spread ingredients in single layer, bake for 40-45 min or until sausage is fully cooked and potatoes are tender.
