Scrambled Eggs with Spinach, Chives & Goat Cheese

Ingredients

6 cups – fresh spinach

16 – eggs

1 teaspoon – salt

1/8 teaspoon – black pepper

2 Tablespoons – olive oil

4 ounces – goat cheese

2 Tablespoons – chives (chopped)

Instructions

1. Blanch spinach in salted boiling water.

2. Drain in a colander and cool under cold running water.

3. Squeeze out excess liquid and chop.

4. Beat the eggs well and season with salt and pepper.

5. In a sauté pan cook over medium heat until eggs begin to set.

6. Add spinach, cheese and chives and continue cooking until eggs are set — but still soft.

7. Serve hot.
