2 8oz Bison steaks

Olive oil

Sea salt and black pepper

Optional—mix salt and pepper with equal parts paprika, dried onion, dried parsley leaves, oregano, mustard seeds, cumin, garlic, chili pepper


Rub the meat with olive oil and salt and pepper or the seasoning mix. Sear or grill the steaks over medium-high heat for 2 1/2 minutes per side. Place the seared steaks in the oven on low broil for three to four minutes. Remove from the oven to a plate. Cover teaks loosely with tin foil and let them rest for at least five minutes before serving. Serve with new potatoes and a seasonal salad.
