1 pound grass-fed bison, cut into 1-inch cubes

2 tablespoons all-purpose flour

1 pound sweet potatoes diced

2 onions chopped

2 cloves garlic sliced

6 carrots, peeled and sliced

3 stalks celery diced

4 tomatoes, diced

4 bay leaves

2 teaspoons Italian seasoning (or herbs of your choice)

1/2 teaspoon black pepper

1/4 teaspoon sea salt

4 cups broth (try vegetable or beef)

Optional: 1/4 cup fresh chopped parsley or cilantro


Place vegetables across bottom of slow cooker, starting with sweet potatoes, onions, garlic, celery, carrots and tomatoes. Add bison meat, then herbs, bay leaves, salt and pepper. Pour broth over ingredients. Cook on low for 6 to 8 hours. Top with parsley or cilantro. Serve with warm bread and a green salad.
