Turkey Burgers with Grilled Veggies


1.5 pounds ground turkey
3 tablespoons fresh dill, minced
3 tablespoons fresh mint, minced
1 tablespoon fresh oregano, minced
Salt and pepper to taste
Olive oil
1 bunch local beets peeled
1 head organic cauliflower
1/2 teaspoon garlic salt
1/2 teaspoon red pepper flakes
1 bunch organic broccolini


Turn grill onto medium high. Mix herbs with ground turkey and shape turkey into 4 patties.

Peel beets and slice into wedges by cutting beets in half, then into quarters and then again into eights. Place cut beets into a bowl and drizzle with olive oil. Place broccolini in a bowl and drizzle with olive oil. Cut cauliflower into 4 steaks. Drizzle with olive oil, sprinkle with garlic salt and red pepper flakes. If cauliflower pieces break off, place extra pieces onto skewers.

Place turkey burgers on grill and cook approximately 5 minutes aside, until meat thermometer reads approximately 160 degrees Fahrenheit.

Place beets on grill and cook for approximately 8 to 10 minutes a side, until they are tender. Cook broccolini for approximately 3 minutes a side and cauliflower for 4 to 6 minutes a side. Serve veggies and burgers together.
