Ingredients

Surf & Turf Ingredients—serves 2

  • 1 bunch asparagus with ends removed
  • 2 live lobsters
  • 8-10 ounces filet mignon
  • 1 tablespoon extra virgin olive oil
  • 3 teaspoons chopped fresh thyme
  • Salt and pepper to taste

Serve with Herb Butter:

  • 4 Tbsp butter
  • 1 garlic clove minced
  • 2 Tbsp fresh chives
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Bring 8 quarts of water to a boil in a pot that is approximately 20 quarts in size, or big enough to hold both lobsters. Add 1 teaspoon salt. Grabbing the lobster behind the eyes, rinse them with cold water before plunging them into the hot water and cover. Cook for at least 15 minutes. Lobsters will turn bright red and the tail will curl under when they are done. A small leg should remove easily. Drain water when lobsters are done. Let lobsters cool. Serve lobsters whole, or break into parts, serving just the tail and claws or remove meat from tail and claws prior to serving. You will need scissors or a knife to cut through the membrane along the tail to get to the meat. You can use a nutcracker to get to the meat in the claws.
  2. For herb butter, melt butter in saucepan over medium heat. Do not stir. When butter is melted, skim foam off butter. Stir in minced garlic, chives, parsley and a pinch of salt and pepper. Place in a bowl.
  3. Place the oven broiler on low. Season the steak with olive oil, salt and pepper. Sprinkle with thyme. Heat 1 tablespoon olive oil in a oven-proof skillet over medium-high heat. Sear the beef on each side for approximately 3 minutes. Transfer the skillet to the oven and cook steak for approximately another 2-4 minutes, depending on how cooked you would like it to be. Remove from oven and place on cutting board to cool. Cut steak into two pieces.
  4. Place a few inches of water in a saucepan on the stove and bring to a boil. Place a basket for steaming vegetables in the water. Place asparagus in the basket. Cover asparagus and cook for approximately 4 minutes, until asparagus is slightly tender but not overcooked. Remove from basket.

On a plate, serve steak, asparagus and lobster. Dip lobster into herb butter if desired.
