3 – large eggs blended
1 cup – 1/2 cups sugar or use applesauce instead of sugar. Applesauce can be used for as a substitute for sugar.
1/2 brown sugar
1 cup – vegetable oil
2 – zucchinis grated
1 teaspoon – vanilla extract
3 cups – Lillabees Gluten Free Flour
1 teaspoon – salt
1 teaspoon – baking soda
1/4 cup baking powder
1 tablespoon – ground cinnamon
Optional: 1/2 – 1 cup chocolate chips or cacao nibs
1. Using a blender, mix eggs, sugar, oil, zucchini and vanilla together.
2. In a separate bowl combine driy ingredients—flour, salt, baking soda, baking powder and cinnamon—and then blend into wet mixture.
3. Pour into 2 lightly greased bread pans or make into cupcakes.
4. Bake at 350 degrees for approximately 1 hour, until top is lightly brown and springs back when touched. If you’re making muffins, check on them after 20 minutes and then cook for however much more time is needed after that.
