Zucchini Bread Muffins

Ingredients

2 cups – shredded zucchini

1/2 bunch – shredded green onions

4 cups – all-purpose flour

1 teaspoon – baking powder

1 teaspoon – salt

1 teaspoon – baking soda

1 teaspoon – black pepper

1/2 teaspoons – cayenne pepper

1/2 teaspoon – garlic powder

1 teaspoon – dried thyme

1 teaspoon – dried ground rosemary

4 – eggs

3/4 cup – olive oil

1 cup – buttermilk

1/2 cup – sour cream

2 cups – parmesan cheese

Instructions

1. Shred zucchini with green onions.

2. Combine all dry ingredients.

3. Combine all wet ingredients, aside from zucchini.

4. Fold wet ingredients into dry, then add the zucchini and cheese.

5. Scoop into mini loaf pans and top with more parmesan. Bake at 325 degrees until done.
