Zucchini Waffles


2 cups shredded zucchini

1/2 sweet onion, diced

1/2 cup almond flour

3 eggs

1/2 teaspoon garlic powder

1 tablespoon fast-acting yeast

2 tablespoons coconut oil, melted

1/2 teaspoon salt

Optional: Salsa and avocado


Lightly brush or spray the waffle iron with vegetable oil before you start cooking the first waffle. You should not have to grease it again while cooking waffles. Grate the zucchini. Use a paper towel to try to squeeze out moisture from zucchini. Dice onion and add to zucchini. Melt coconut oil and let sit for a minute. In a separate bowl, beat 3 eggs. Add almond flour, garlic powder, yeast and salt to eggs. Stir in coconut oil and combine mixture with zucchini and onion.

Scoop approximately 3/4–1 cup into a waffle iron. Cook for approximately 4 minutes. Eat solo or serve with salsa and avocado slices.
